Ready to kick off Monday with some iOS flashing? Excellent, because Apple’s just released the second beta of iOS 5.1, lovingly christened 9B5127c. No Cupertino devices at Engadget HQ have taken the plunge, but as noted by MacRumors, the beta enables individual picture deletion from Photo Stream — which differs from the existing delete all or nothing implementation. Too early to tell if it’ll finally squash any lingering battery bugs once and for all, but you can hit Apple’s developer website to get your download on — just be ready for the next one in two weeks, cool?

Lookie here — an iPad app just got miniaturized. It’s not too often we see the progress work in reverse, but one of Apple’s flagship iPad programs has just been converted for use on the iPhone and iPod touch. It doesn’t seem as if too much is changing — outside of the shrunken display options, of course. You can still plug your electric guitar into either of Apple’s more bantam iOS devices in order to record through classic amps and stompbox effects, or record your voice or any acoustic sound using the built-in microphone. The app enables users to record and mix up to eight tracks and then share the finished product with friends or send it to your Mac to keep working on it in GarageBand (the “real one”) or Logic Pro. It’ll run new users $4.99, but if you already purchased the iPad build, it’s a free update to get the new ports. Oh, and if you’re curious, the app now runs on iPad, iPad 2, iPhone 3GS, iPhone 4, iPhone 4S and iPod touch (third and fourth generation). Tap the iTunes link below to snag your own copy.

That Siri gal is certainly making the rounds these days. When she’s not answering your questions on a 4S, she’s showing up on iPads and elder iPhones. Not one to play favorites, Siri’s now lending her considerable talents to an iPod touch. Two enterprising young hackers, euwars and rud0lf77, are the ones who put Siri on the iPod, and you can see the results of their labor in the video after the break. Of course, Apple’s servers still aren’t as friendly as the virtual voice assistant, so Siri’s latest cameo remains a silent one — but some Siri’s better than none, right?

Offering to play matchmaker between your high-end camera and smartphone, XEquals has extended support for its BlueSLR remote control beyond iOS. Yes, Blackberry and Android users can now download their respective app and pair this Bluetooth dongle to their (still Nikon-only) DSLR. The compatible dongle and free app will land later this month, but before you lay down the requisite $149, it’s worth checking that both your camera and phone models are supported. As it stands, compatible Android phones are limited to some HTC or Samsung models. While Android support is likely to expand in the future, there’s no word on a Pre 3 version.

Even if you were one of those Apple fans who was less than impressed by the iPhone 4S, there is still reason for excitement — and that reason’s name is iOS 5. If you’ve got an iPhone 3GS, 4, third- or fourth-gen iPod touch, or either of the iPads you can download Apple’s latest and greatest mobile OS right now. That’s right, all the fun new features like pull-down notifications, iCloud, iMessage, Find my Friends, Twitter integration and lock screen access to your camera will be at your disposal. Sadly you will not be getting a taste of Siri, which appears to a 4S only feature for now. Still, there’s more than enough here to make it a worthy upgrade to your device. So, what are you waiting for? Go hit that update button now.

Update: Just so you’re aware, you’ll need iTunes 10.5 installed to get the latest iOS. There’s also an update to OS X coming down the pipes — version 10.7.2 — which officially delivers iCloud to your Mac. Huzzah!
