Thanksgiving Leftovers With Jeff Mauro

What to do with all those Thanksgiving leftovers? Not another turkey sandwich. Ugh. Jeff Mauro, The Food Network’s Sandwich King has a few ideas for you!

Cranberry BBQ Turkey Sandwich

8 ounces sliced leftover turkey meat
Cranberry BBQ Sauce, recipe follows
4 hoagie rolls, buttered and toasted
4 thick slices fontina cheese
1 cup leftover crispy onions

Preheat broiler.

In a large bowl, add turkey meat and one cup hot cranberry bbq sauce and toss to coat. Pile bbq turkey meat on hoagie roll and top with fontina cheese. Place sandwiches on baking sheet and place under broiler until cheese melts and is bubbly. Top sandwich with fried onions and serve.

Cranberry BBQ Sauce:
1 cup leftover cranberry sauce, recipe follows
3 tablespoons apple cider vinegar
1/4 teaspoon hot sauce, such as Tabasco
1 teaspoon Dijon mustard
1/2 teaspoon fresh ground black pepper
2 teaspoons Worcestershire sauce
1 cup tomato puree
1/2 teaspoon Kosher salt

In a medium saucepan, combine all ingredients. Bring to a boil, reduce heat and simmer uncovered for 8 to 10 minutes, stirring frequently until all ingredients are well incorporated.

12 slices leftover turkey
¼ lb genoa salami, sliced thin
1 cup roasted red peppers – drained
2 large balls of fresh mozzarella – sliced
Homemade Pesto
4 slices of focaccia bread
¼ cup fresh basil

Preheat broiler with oven rack in the center. If thick enough, Slice open foccacia bread (otherwise, leave whole). Layer on inside, the pesto, the turkey, the genoa and then top with fresh mozzarella.

Place on a baking sheet and broil until golden and bubbly, about five to seven minutes. Top with fresh basil and serve!

Homemade Pecan Pesto

½ Cup Toated Pecans
2 garlic cloves — minced
2 cups fresh basil
½ cup extra virgin olive oil
1/3 cup grated romano cheese
salt and pepper

Add garlic, pecans, and oil into a food processor. Pulse 10 times or until smooth. Add in basil and salt and pepper and pulse 5 times or until combined but still has some texture. Adjust seasoning if necessary.

WHY: Mikky Ekko is a young, up and coming American singer songwriter with a head turning voice that you may recognize from his collaboration with Rihanna on her 2013 smash “Stay”. But Ekko will soon make a name for himself on his own – he is currently working on his highly anticipated debut album, which reportedly will feature guest appearances from hit-makers like Benny Blanco and Ryan Tedder. Ekko is only on tour for a few more weeks, so if you plan on being in San Francisco this holiday season don’t miss his sure-to-be incredible live show @ the Rickshaw on December 16th.

WHO: Ella Eyre
WHEN: December 11th, O2 Arena – London, UK
WHY: In the short 2 years that British-born Ella Eyre has been on the music scene, the budding pop songstress has earned an impressive number of credits to her name. Collaborations with Bastille, Wiz Khalifa, and Rudimental have all garnered her much deserved attention, as well as a nomination for the British Critics Choice Award (losing only to Sam Smith). Her live shows showcase her powerful, effortless vocals, and further prove that she belongs in the limelight with the best of them. Eyre is in the middle of a 14 date UK tour, so if you are going to be in London on December 11th catch her show at the O2, where she will be opening up for legendary electronic dance duo Basement Jaxx.

WHO: Royal Blood
WHEN: December 13th, The Shrine – Los Angeles, CA
WHY: Emerging British hard rockers Royal Blood mix garage and blues to form a unique sound that has attracted a lot of attention as of late. The band also gained major traction this year with a supporting gig for the Arctic Monkeys and a nomination for the prestigious BBC Sound of 2014 award. Royal Blood is bringing their eclectic brand of rock and roll to this year’s KROQ’s Almost Acoustic Christmas, and will perform alongside established acts like Kings of Leon and Vampire Weekend. Don’t miss this year’s show at the Shrine in Los Angeles on December 13th!

GTA IV RoboCop ED-209 Mod: You Have 20 Seconds to Install…

When I was growing up, my parents let me watch pretty much any movie I wanted when it came out on VHS. One of my favorites was RoboCop. Something about a cyborg robot with a gun that came out of his thigh was very appealing to my younger self. I’ve tried to watch the original films now that I am an adult, and they are so cheesy it hurts.

If you are a fan of GTA IV and RoboCop of the ’80s, JulioNIB has made a mod that you will want to check out. The mod brings ED-209 from the first RoboCop film to the virtual streets of GTA IV. ED-209 isn’t there to stop you from rampaging in the game. In fact, you can use the robot as a bodyguard.

Better yet, you can take direct control of the robot and use it to spray hot metal death at the citizens of New Detroit Liberty City. I always though ED-209 looked like a walking microphone, and the virtual creation looks just like the one from the film.
